Darbhanga: Sim Ki Sabzi is a traditional dish which is very popular in Mithila region. This vegetable is not only delicious but also nutritious. To make Sim Ki Sabzi, you need some simple ingredients, such as Sim, potatoes, onions, garlic and spices.
To make sim sabzi, first wash and clean the potatoes and sim properly. After that, cut the potatoes into roughly sized pieces and cut the sim into small pieces. Now heat oil in a pan and fry the potatoes in it. After the potatoes are fried, take them out and fry the sim in the same pan.
Now add onion, garlic, yellow mustard in a mixer and grind it. Add turmeric powder, chilli powder, coriander powder, salt and Kashmiri chilli to this spice and mix. Now heat oil in a pan and add ground spices and fry. When the masala is roasted, add fried sim and potatoes and mix.
Cook this mixture for 15 minutes so that the spices penetrate properly into the sim and potatoes. After that add water to it and cover it. After some time, when you remove the lid, you will see that the curry is ready. If you want thick gravy then you can add water as per your requirement or if you want less gravy then you can dry the vegetable. You can serve it with rice, roti or paratha.
