The natural yeast and bacteria present in the flour gradually remain active and keep producing CO₂, acid and different types of smells. 2. Quality of bread is affected
The gluten of flour kept in the refrigerator slowly starts breaking down. Gluten is the same structure that makes bread puffy and soft.
