Sooji Dhokla Recipe: Semolina Dhokla is a light, nutritious and very tasty breakfast, which can be made at every home without much effort. It is softer and lighter than gram flour dhokla, hence children and adults alike eat it with great enthusiasm. From morning breakfast to evening tea, semolina dhokla is considered perfect at all times.
Its specialty is that neither much material nor much time is required to make it. Made with the help of semolina, curd and some mild spices, this Dhokla is excellent in both taste and health.
first puff the semolina
First of all, take thick semolina in a big vessel and add whipped sour curd to it. Prepare a thick and smooth solution by adding little water to this mixture. Keep in mind that the solution should neither be too thin nor too thick. Keep this mixture covered for about 10 to 15 minutes, so that the semolina can swell properly and the dhokla becomes puffy.
After this, add grated ginger, green chillies, salt as per taste and very little sugar in the solution. Sugar in Dhokla improves the taste and also increases the softness. However, you can skip this part.
Prepare the steamer in advance
Now immediately bring the solution to the cooking stage. As soon as you prepare to place the dhokla in the steamer, add one tablespoon of eno fruit salt or half a teaspoon of baking soda to the batter and mix gently. The solution will swell as soon as it is mixed, so do not delay and immediately pour the mixture into an oiled plate or mold.
Preheat the steamer and steam the dhokla on medium flame for 15 to 20 minutes. To check whether the Dhokla is cooked or not, insert a toothpick – if it comes out clean, then the Dhokla is ready.

Now comes the turn of morning. Heat oil in a small pan and add mustard seeds, curry leaves, green chillies and some sesame seeds. This tadka gives wonderful aroma and taste to dhokla. First make light holes on the prepared dhokla, so that the tadka reaches inside properly. Then pour the tadka evenly on top. Finally, decorate the dhokla by sprinkling fresh coriander and coconut shavings.
Completely different from gram flour dhokla
This semolina dhokla is not only light and tasty, but is also very easy to digest. Serve it with green chutney or sweet chutney and enjoy the real Gujarati taste in every bite. It is quite different from gram flour dhokla and is very much liked by those who like idli.
