Sesame seeds – 3 tbsp
Cardamom powder – ½ tsp
Ghee or oil – as per need
Step-by-step method of making sesame-jaggery puri-
prepare the dough base
First of all take flour in a vessel. Now add sesame and cardamom powder to it. After this add 2 spoons of ghee or oil and mix it well in the flour with the help of hands. With this step the dough becomes soft and slightly moist.
prepare jaggery solution
Now pour water in a pan or small vessel and heat it lightly. Add grated jaggery to it and cook on low flame. Keep in mind that the water should not boil, just that the jaggery should dissolve completely. When the jaggery dissolves, turn off the gas and let it cool. After cooling, filter this solution, so that no dirt or particles remain.
knead the dough
Now slowly pour this jaggery solution into the flour and knead a soft dough. The jaggery solution is sweet, so the dough may be a little sticky, but it can be easily set by applying some ghee. After the dough is ready, cover it and keep it for 15 minutes. This sets the dough and becomes perfect for rolling out puri.
