Khappar Pitha Recipe: This traditional dish of Jharkhand is prepared only by grinding rice in an earthen pot without oil, spices, garlic and onion. This simple desi dish is considered delicious in taste and very beneficial for health.
This traditional dish of Jharkhand is prepared especially during cold days. The name of this dish is also different in different places. In Jharkhand, this dish is called Khapar Pitha and in some places it is called Paneska, while in Chhattisgarh this dish is called Atte Ka Saat. The only thing needed to make this dish is rice. No oil, no spices, no onion or garlic. The dish is prepared simply by grinding rice. You can enjoy this dish with milk or curd.
If you also want to make Panishka at home, then today we are going to tell you about the recipe and ingredients. To make Panishka, first of all you may need two things. One is some earthen vessel which is called Khappar, a lid to cover the Khappar in which Paneshka will be made and second is rice from which Paneshka will be prepared.
First of all, soak the rice thoroughly in water for 7 to 8 hours. After sending the rice in water for 7 to 8 hours, mix the rice thoroughly and let it dry. When the rice dries, grind it well in a mixer like very fine flour.

After grinding the rice, add rice flour to the pan to soften it and fry it for some time without adding oil or ghee. This will remove whatever moisture is present in the flour. After frying, now filter the rice flour through a sieve. With this, the thick lumps of flour will separate.
Now add hot water to the rice flour and prepare a thick batter. Then keep kneading the dough with hands for 4 to 5 minutes. Then slowly add water and prepare a thin batter. Then keep the solution covered for 20 to 25 minutes. Now put the earthen pot, which is also called Khapri, on the gas and pour the prepared batter into the earthen pot from Dabbu.
Make sure that the earthen pot becomes very hot. After that, turn the gas to low flame and then add the rice batter. After adding the batter, let it rest for two to three minutes. Gradually it will get cooked and then pick it up.
Similarly, prepare Panesca, Khappar Pitha, Dhaknesar from all the batter. Then you can eat it in both sweet or salty form.
If you want to eat it as sweet then heat milk and mix jaggery in it. You can eat this Panesca by adding it. If you want to eat it as a snack, then add roasted cumin and chillies to curd or buttermilk. You can also eat this khappar pitha or paneshka in salty form by adding salt.
