Till now you must have seen curd, buttermilk and cheese being made from milk, but in Chhatarpur district of Madhya Pradesh, a dish is also made from milk, which is most liked during the winter season. In fact, in Chhatarpur district, when a cow or buffalo is slaughtered, the initial milk is considered impure for about 10 days, but in Chhatarpur district, a dish called Pesari or Teli is made from this milk, which is most liked to be eaten in the cold season. Eating this also provides relief from cold and cough.
This is how the dish is prepared
Vaidyanath explains that this dish is prepared only with a special milk. When a cow or buffalo is calved, oil or pessary is made from the milk that comes out in the first 10 to 15 days. To make this dish, first of all mix dry ginger in raw milk of cow or buffalo. You can also add jaggery, coconut kernel, raisins and dates in it. After this, cook on low flame for 10 to 15 minutes. After about 15 minutes, remove it from the gas and keep it aside. It sets within a few minutes.

Vaidyanath says that if you make oil from one kilogram of milk, you can add about five grams of dry ginger in it. Also you can add 250 grams or a loaf of jaggery in it. Apart from this, you can add coconut kernel, raisins, makhana and dates as per your choice. He further explains that this dish is eaten the most during the winter season because its nature is hot. From children to the elderly, everyone likes oil. Due to its warming nature, it also provides relief from cold and cough.
