Why were tandoors banned and why is this method necessary?
In view of the continuously deteriorating air in Delhi, Delhi Pollution Control Committee has taken a big decision. Coal and wood fired tandoors have been banned in hotels, restaurants and street food stalls. Because of this, it is natural for the people who like tandoori roti to be worried. In such a situation, making tandoori roti at home without smoke becomes a better and safer option.
The right way to knead the dough for perfect tandoori roti
-The secret of good tandoori roti is hidden in its soft and properly kneaded dough. For this take 2 cups of flour and 1 cup of wheat flour. Add 1 teaspoon baking powder and half teaspoon baking soda to it and mix well. This will help in making the roti rise.
-Now in a separate bowl, add 1 cup lukewarm milk, half cup curd, 1 teaspoon sugar, 1 teaspoon salt and 2 teaspoons oil and mix well. Knead the dough with the help of this mixture. Keep in mind that the dough should not be too hard. After kneading the dough, apply some oil on it, cover it and let it rest for about 30 minutes.
How to convert cooker into instant tandoor
The lifeblood of this recipe is the pressure cooker. First of all, remove the whistle and rubber gasket of the cooker. Now keep the cooker upside down on the gas. Let the cooker heat thoroughly on medium to high flame. Only when the outer surface of the cooker gets heated well, place the roti on it. This hot surface will act as the tandoor.
Correct way to roll naan and add flavor
-Take a small ball of dough and with the help of dry flour, roll it a little thicker than a normal roti. Now add some finely chopped garlic, nigella seeds and green coriander on the rolled roti. Roll again gently so that everything sticks to the dough.
-Now apply water thoroughly on the other side of the roti. This watery side will stick to the cooker and will not allow the roti to fall.
Method of baking bread by sticking it on the cooker
-Gently stick the water soaked side on the reverse surface of the hot cooker. You can pre-roll 3 to 5 rotis and keep them together. Within a few seconds the roti will start rising and small bubbles will start appearing on it.
-Now hold the cooker carefully and cook it on gas flame while rotating it all around. With this, the roti will be cooked properly from all sides and tandoori marks will also appear.
The taste will increase as soon as you apply butter.
