Christmas Special Healthy and Tasty Sweet Recipes
1. Blueberry Chia Muffins
Material:
-eggs
-Brown sugar
-olive oil
-Finely grated zest of 1 lemon
-vanilla essence
-Milk or almond milk
-Flour
-Blueberry
-Chia seeds
Method of preparation:
First of all, preheat the oven at 180 degrees Celsius. Line a muffin tin with paper liners. Combine eggs and brown sugar in a bowl and beat well until the mixture appears light and fluffy. Now add olive oil, vanilla essence and lemon zest and mix.
After this slowly add milk and flour and beat gently. Keep in mind that the batter should not be too thick. Now add blueberries to it. Pour the prepared batter into the muffin tin, but do not fill till the brim as the muffins rise when baked. Sprinkle chia seeds on top.
Bake the muffins for 20–25 minutes. Check by inserting a knife in the middle, if the knife comes out clean then the muffins are ready. Serve after cooling.
2. Pineapple Cake Recipe
Material:
-Brown sugar
-eggs
-olive oil
-ground cinnamon
-ground cloves
-Vanilla
-Flour
-chopped almonds
-almond milk
-Raisin
-chopped pear pieces
-cinnamon sugar
Method of preparation:
Preheat the oven to 180 degrees Celsius. Apply a little oil in the cake tin and sprinkle flour. Put eggs and brown sugar in a bowl and beat them well. When the mixture becomes light, add olive oil, cinnamon, cloves and vanilla to it.
Now add flour and chopped almonds and keep beating so that lumps do not form. After this slowly add almond milk. Drain excess water from raisins and mix it in the batter along with pear pieces.
Pour the prepared batter into the tin and bake for 35–40 minutes. When the color of the cake starts turning golden, check with a knife. After baking, let the cake cool for 20 minutes and then slice and serve.
