First of all buy Bathua from the market and bring it home. Then wash that bathtub thoroughly. Keep in mind that cut the stem of Bathua. Then take a vessel, add water in it, add bathua and heat it. Let it boil for some time. Now grind whole red chillies in a mortar or mixer and add green coriander and make red chilli chutney on the mortar. Then take out the water from the boiled bathua and squeeze it well. After this, add red chilli chutney to the bathua and mix well.
The most important thing for making raita is curd. Buy good curd from the market and if the curd is homemade then nothing can be better than this. Now take curd and beat it well. When the curd becomes thin enough, add ground bathua to it. Then keep beating it for some time. Now it is the turn to add spices to the raita.
Keep one thing in mind that if all the spices are roasted in raita, then the taste gets enhanced. Add roasted cumin, roasted coriander, roasted red chilli powder, black salt, chaat masala to the masala and then mix well. Your Bathua raita is ready. You can eat rice and roti with this. Add asafoetida and cumin seeds roasted in mustard oil to the raita, the taste will increase manifold.
