Gud ki Rewari Recipe:As soon as the winter season arrives, we automatically start remembering things made from jaggery and sesame seeds. One of these is crispy, sweet and sweet jaggery rewari, which is everyone’s favorite from children to adults. Often people think that making it at home is a difficult task, but the truth is that if you know the right method, then Rebri can be made easily in the home kitchen. The special thing is that it can be stored for a long time. So let us know how to make jaggery and sesame rewari in your kitchen in a very easy way.
Ingredients for making jaggery rewari-
1 cup sugar
1 cup jaggery (grated or in small pieces)
1/2 cup water
2 tsp desi ghee
1 cup white sesame seeds
Ghee, for greasing the plate
Method of making Rewari-
-First of all, take a thick bottom pan and add 1 cup of sugar in it. Now add 1 cup jaggery to it and mix both well. After this add about half a cup of water and start cooking on medium flame. Keep stirring with a spoon, so that the jaggery and sugar dissolve completely and do not stick to the bottom.
-When the mixture starts boiling well and becomes a little thick, slow down the gas. Now cook this mixture until it becomes like a tight syrup. To check whether the syrup is ready or not, pour a little mixture on the plate. If it starts freezing, then understand that the right stage has come. Now turn off the gas.
-Apply a little ghee in a plate or plate and turn the prepared jaggery-sugar mixture into it. Let it cool a little, but do not cool it completely.
-When the mixture cools down slightly and is manageable with hands, apply some ghee on the palms and start stretching it. Just like you pull Chikki or Khandvi, pull it repeatedly and fold it. This makes Rabdi light and crispy.
-Now spread this mixture like a thin long strip and cut it into small pieces with a knife. Add white sesame seeds in another pan and fry on low flame. When the sesame seeds turn light pink and the aroma starts coming, turn off the gas.
-Put the chopped Rabdi pieces in the pan with sesame seeds and mix gently, so that the sesame seeds stick well all around. Now take out these pieces in a plate and with the help of a bowl or a spoon, press them lightly and give them a thin shape, just like the rabri available in the market.
-Let the rabri cool completely. Then store in an airtight jar. In this way, your homemade jaggery rewari is ready, taste exactly like the market one, but more pure and healthy.
