To make this Dhaba Style Egg Curry, you need 5-6 boiled eggs, 2 finely chopped onions, 2 tomato puree, 2 finely chopped green chillies, 1 tablespoon ginger-garlic paste, 3-4 tablespoon oil, 1 teaspoon cumin, 1 bay leaf, half teaspoon turmeric powder, 1 teaspoon red chili powder, 1 teaspoon coriander powder, half teaspoon garam masala, salt to taste and Green coriander for garnishing.

First of all, remove the peels of the boiled eggs and make light cuts with a knife, so that the spices can penetrate inside properly. Now heat oil in a pan and fry these eggs lightly. Later, when the oil is hot, add cumin seeds and bay leaves. When the cumin seeds start crackling, add chopped onions to it and fry on medium flame till it turns golden. Now add ginger-garlic paste and green chilli to it. When the rawness goes away, add tomato puree and fry the spices well. Fry the masala until the oil rises up. After this add turmeric, red chilli, coriander powder and salt and mix well.
Now put boiled eggs in the pan and stir gently in the spices, so that the eggs get coated with the spices. After this add a cup of water and let the gravy boil. Cook on low flame for 7-8 minutes so that the eggs absorb the flavor of the spices. Finally add garam masala and add green coriander on top and turn off the gas.
