Traditional Mogri Churma Recipe: Mogri Churma, the traditional sweet of Rajasthan, has a special identity for its desi taste and unique method. It is made in villages during festivals, marriages and winters. Mogri is prepared in a granular form like semolina by kneading the flour without kneading it in ghee. Villager Sunita Devi told that making Mogri churma is very easy and fun. As delicious as it is in taste, it is equally easy to make. For this, first of all the required ingredients are wheat flour, desi ghee, jaggery, some water, sugar candy grains, cardamom powder, chopped almonds and saffron.

First of all, add ghee little by little to wheat flour and mix well by mashing the flour with both hands. Now add lukewarm water little by little, but do not knead the dough. Just collect it, make a bowl-shaped pile, cover and keep it aside for 30 minutes. After this, mash the flour again with hands and filter it with the help of a sieve and prepare it in a granular form like semolina. This process is called making mogri.
Now roast the prepared Mogri in a pan on low flame till it turns golden brown. On the other hand, dissolve jaggery in water and boil it and then filter it and add it to the roasted mogri. Mix everything well, add some desi ghee on top and then add sugar candy grains, cardamom powder, chopped almonds and saffron and mix well. Delicious Mogri Churma is ready.
Mogri churma is full of energy and gives warmth to the body especially in winter. Wheat and jaggery improve digestion, while desi ghee provides strength and nutrition.
