Panjiri is a traditional superfood for a new mother after delivery, which is considered an excellent source of strength, energy and nutrition. Made from ghee, jaggery, dry fruits and nutritious spices, this Panjiri helps the body to recover faster and also increases milk supply naturally. Consuming a small amount daily gives deep strength and stamina to the new mother from within.

Panjiri is a very nutritious and energy boosting dish for a new mother after delivery. It helps the mother’s body to recover quickly, increases milk supply and strengthens the bones. Panjiri contains fresh ghee, dry fruits and spices, which relieve fatigue and give strength to the body. By eating this the new mother quickly feels healthy and full of energy.

The ingredients required to make Panjiri are as follows: wheat flour, dry coconut, jaggery, desi ghee, edible gum, cashew nuts, almonds, makhana, melon seeds, cardamom, cumin, celery, dry ginger, walnuts, pistachios and kamarkas. All dry fruits and seeds should be fresh. By measuring the spices and jaggery beforehand and keeping them separate, all the ingredients can be mixed easily while making Panjiri.

First of all, heat half the ghee in the pan. Add finely broken gum to it and fry it on low flame until it swells and turns light brown, then take it out in a separate plate. After this, lightly fry almonds, cashews, pistachios and walnuts one by one in ghee and keep them in the same plate. This step helps in making the Panjiri tasty and crunchy.

Put the melon seeds in the pan and fry them while stirring continuously until they turn light brown. After this, put Kamarkas in ghee and fry lightly till it swells. Roast Makhana separately and make powder. This process brings out different flavors and textures in the Panjiri. It is easy to take out all the ingredients in a separate plate and the mixture does not become lumpy.

Add cumin, celery and dry ginger powder to the remaining ghee and fry lightly. Then add grated coconut and fry lightly for 1 minute while stirring continuously. These spices and coconut give aroma and flavor to Panjiri. Now this mixture is ready, which will later be mixed with other roasted dry fruits and flour.

Pour remaining ghee in the pan and add wheat flour to it and fry on low flame until it turns light brown. When a nice aroma starts coming, then understand that the flour is ready. This roasted flour is the base of Panjiri and when combined with jaggery and dry fruits, it makes a delicious mixture. Be careful not to let the flour burn, fry only until it turns light brown.

Now grind all the roasted dry fruits, makhana and kamarkas in a mixer and make powder. Add jaggery, melon seeds, roasted spices and coconut to it and mix well. Then add roasted flour and cardamom powder and mix everything well. In this way a special register is prepared for the new mother. Consuming it in small quantities daily fills the mother’s body with strength and nutrition.
