Even today, in many villages of Jharkhand, Amla pickle is made in the indigenous manner. Oil and spices are not used in this.
Amla pickle is not only delicious, but is also considered very beneficial for health. It is prepared using traditional method even today in the tribal families of Hazaribagh. Once prepared, it can be eaten throughout the year.
While sharing the recipe of making Amla pickle, tribal woman Raveena Kachhap says that this pickle is prepared in a completely natural way. No oil, readymade spices or preservatives are used in it. This is the reason why this pickle does not put any burden on the body, but strengthens the digestive power.

He further told that to make it, first of all fresh, big and light yellow gooseberries are taken. These are then washed thoroughly and dried a little in the sun, so that the moisture gets removed. After this, the gooseberries are added salt to water and boiled lightly. The purpose of boiling is that the Amla becomes soft and its slices can be separated easily. Also add salt to the pickle. When the gooseberries become slightly soft, they are cooled and the slices are taken out by pressing with hands.
He further told that the real specialty of this pickle is that it can be prepared in the simplest mixture. After this, only light salt and vinegar is added to the gooseberry slices. Both salt and vinegar naturally preserve the pickle. There is neither much salt in it nor is the sourness of vinegar strong.
He further told that this pickle is then filled in a big glass jar and kept in the sun for 7-10 days continuously. Every day the jar is opened and shaken lightly, so that the entire mixture applies evenly on the gooseberry slices. Amla is not only protected from sunlight, but its natural taste also becomes more enhanced.
This pickle remains safe for one year. Due to the absence of oil and spices, this pickle is light, digestive and absolutely safe for the stomach. Amla is the biggest source of Vitamin C, which strengthens immunity in winter. It makes skin glow, strengthens hair and reduces inflammation in the body. In villages it is advised to eat it daily.
Even today, people in the villages of Jharkhand adopt this traditional method, because it is good not only for taste but also for health. This Amla pickle without oil and without spices is considered a natural solution to keep the body healthy in winter.
