The special thing is that in Karauli, there are only two Muslim artisans who make this unique Gajak, whose secret recipe is liked not only in Karauli but also far and wide.
The season of sugar free gajak in Karauli starts from the last days of November and continues till January. It is only when the temperature drops that this Gajak becomes what it should be – crisp, light and full of the aroma of homemade Tili.
This is the reason why the two famous artisans here, Wasim Gajak Bhandar and Maula Gajak Bhandar produce it only during these cold months. Rest of the time the temperature affects its quality, hence its production is stopped.

The biggest secret of this sugar free gajak is the low calorie sugar free sugar used in it, which is specially procured from Mathura. This sugar of Himalaya Company is considered safer for diabetes patients as compared to normal jaggery or sugar. This is the reason why diabetes patients living in Karauli and surrounding areas eagerly wait for this Gajak season every year.
Artisan Wasim Khan, who is preparing sugar-free Gajak, says that its real specialty is the sugar syrup, hand-made tili, and the traditional technique of slow grinding. First a light syrup of sugar free sugar is prepared, then roasted and ground pure sesame seeds are added to it.
After this the mixture is ground so that it becomes light and crispy. Finally it is made more delicious by adding dry fruits on top. This technique makes it different from the common Gajak and even without sugar, its taste is completely desi and rich.
The ingredients of this sugar free gajak are expensive and the technique of making it is laborious, hence its price is higher than the normal gajak. This year its price has been kept at around ₹ 450 per kg. On one hand the taste is unique, on the other hand the limited time is the reason why this Gajak gets sold quickly.
