Garlic-Dry Chilli Chutney Recipe: Chutney has special importance in the traditional food tradition of Rajasthan. This chutney with spicy and sour taste makes even ordinary food special. Villager Geeta Devi has shared the essential ingredients for making chutney. To make chutney, take garlic cloves, two tablespoons of dry red chilli, one tablespoon of coriander powder, one teaspoon of cumin, fennel, dry mango powder, salt, oil and green coriander leaves. Asafoetida can also be added to it, which along with taste also helps in digestion.

First of all, put dry red chilli on a grater and grind it by adding some water to it. Now heat oil in a pan, add cumin seeds and garlic cloves in it. Then add chillies ground on a grater and add salt and dry mango powder. And let it cook on low flame for some time. When the chutney starts thickening, add green coriander leaves to it and turn off the gas.
Earlier, when vegetables were not available, this chutney used to make the food tasty with the help of dry spices. This chutney, made with less ingredients, has health benefits along with its taste. Even today this chutney is used daily in villages.
This chutney made from garlic and spices is not only delicious but also very beneficial for health. It is considered helpful in increasing immunity. It improves digestion and also gives relief in cold and cough. And gives warmth in winter.
