Fish seller Sajan Kumar says that it can be easily distinguished by the smell of fish. Fresh fish has a natural marine or earthy aroma. If there is a strong or rotten smell coming from the fish, then understand that it has been kept on ice for more than two-three days. Many times shopkeepers use more ice or water to hide the smell.
Sajan Kumar told that the eyes of fresh fish are clean, bulging and shiny. If the eyes appear sunken, cloudy, or covered with a white layer, the fish may be old. Also told that if kept on ice for too long, the eyes of the fish start shrinking and its freshness is lost.
The skin of fresh fish remains tight and its peels do not fall off easily. If the peel starts breaking when gently touched or the skin feels loose, then the fish is stale. By keeping it on ice for several days, the skin loses its moisture and it starts appearing dry and dull.

Sajan told that fresh fish immediately returns to its old state when pressed. But if a depression remains when pressed or the meat feels soft and sticky, then the fish is several days old. One should never buy such fish, it is harmful to health.
