Ginger Green Chili Pickle: Pickles are a part of Indian food which not only enhances the taste but also changes the entire experience of eating. If you also like something spicy and spicy with your food, then pickle made from ginger and green chilli will win your heart. The specialty of this pickle is that it is very easy to make, does not require many things and its taste is so strong that once you make it, you will want to make it again and again. Ginger is known for its strong aroma and heat, while green chillies provide a tingling spiciness. When both are combined with lemon juice, mustard oil and mild spices, a spicy dish is prepared which makes every food special. Be it roti, paratha, dal-rice or khichdi, this pickle fits with everything. The best thing about this recipe is that it takes very little time to make. Just cut ginger, prepare chillies, add spices and show some sunlight and the pickle is ready. So, let us know the complete recipe of this wonderful and quick pickle, which you can prepare at home in a very clean way.

necessary materials
-Ginger 200 grams
-Green chilli 150 grams
-Lemon juice 4 tbsp
-Mustard oil 4 tbsp
-Yellow mustard powder 2 tbsp
-salt to taste
-Turmeric powder 1 tsp
-Celery 1 tsp

How to prepare pickles

1. Preparation of ginger and chilli
First of all, wash the ginger, clean it thoroughly and remove the peel. Now cut it lengthwise into thin stick-like slices so that the spices can penetrate inside properly. After that, wash the green chillies, dry them and make a small incision in the middle. If you want, you can also cut them into round pieces.

2. Process of mixing spices
Take a big vessel and put both ginger and green chillies in it. Now add salt, turmeric and mustard powder to it and mix well. Leave this mix for about 10-15 minutes. Due to this, ginger and chilli become a little soft and the spices get absorbed properly.

3. Lemon and oil seasoning
Now add lemon juice, celery and mustard oil in the same vessel. Mix everything well again so that the masala coats each piece evenly. Lemon juice gives sourness to this pickle, while mustard oil is its real seasoning, which enhances both aroma and taste.

4. Fill the jar and show the sunshine
Now take a clean and dry glass jar. Keep in mind that there should not be any moisture in the jar, otherwise the pickle may get spoiled. Fill the prepared mixture in the jar and close the lid. Keep it in the sun for a day so that the oil and spices cook properly and the taste becomes better.

5. Amazing pickle is ready
Your spicy ginger-chilli pickle is ready to serve the next day. As soon as you eat it, you first feel the mild heat of ginger and then the heat of chilli on your tongue. It makes even ordinary food special and the enjoyment of eating increases manifold. Its pleasure increases especially in winter.
