Method to make Orange Chutney-
Material:
4 large oranges
1 tablespoon vegetable oil
1 tsp mustard seeds
1 tsp cumin
1/2 tsp turmeric powder
1/2 tsp red chilli powder
1/4 tsp asafoetida
salt as per taste
1/2 cup sugar
2 dried red chillies
2 tbsp vinegar
Method:
First of all, wash and peel the orange thoroughly. Remove seeds and cut into small pieces. Heat oil in a pan. When the oil is hot, add mustard and let it splutter. Now add cumin seeds and fry lightly. Lower the flame and add turmeric, red chilli powder and asafoetida. Mix well so that the spices start giving off aroma.
Now add chopped orange and mix well with the spices. Cook it for about 15-20 minutes, stirring occasionally, until the orange becomes soft and the mixture thickens. Now add sugar and salt to balance the taste. Keep stirring continuously so that the sugar dissolves completely.
If the chutney seems too sweet or sour, add dry red chilli and cook on low flame for 10 minutes, until it attains a chutney-like consistency. Finally add vinegar and mix well. Adjust as per taste and remove from pan. Let cool and serve.
