Ingredients required to make Lauki Dhokla
For Dhokla Batter:
– Bottle gourd (grated) – 1 cup
-Gram flour – 1 cup
-Curd – 1 cup
-Green chilli paste – 1 teaspoon
-Grated ginger – ½ teaspoon
-Turmeric – ½ teaspoon
-Lemon juice – 1 teaspoon
-Salt – as per taste
-Water – as per requirement
-Eno – 1 teaspoon
For tempering:
-Oil – as per requirement
– Mustard – 1 teaspoon
-Curry leaves – 8-10
-Green chilli cut lengthwise – 2
-Sugar – 1 teaspoon
-Lemon juice – 1 teaspoon
-Water – as per requirement
-Green coriander – to decorate
How to make Lauki Dhokla
1. Prepare the batter
Mix gram flour and curd in a large bowl. Now add grated bottle gourd, turmeric, ginger and green chilli paste and mix well. Cover it and keep it aside for 10-15 minutes.
2. Steam Dhokla
Boil water in dhokla steamer or big kadhai. Grease the dhokla tray or tiffin with oil. Add lemon juice and Eno to the prepared batter and mix gently. Pour the batter in a greased plate and steam for 20 minutes on low flame. When cooked, take out the Dhokla in a plate and cut it into pieces.
3. Season
Heat oil in a pan. Add mustard seeds, curry leaves and green chillies and crackle. After this add water, sugar and lemon juice and boil. Pour the prepared tadka over the dhokla.
4. Serve
Garnish hot Lauki Dhokla with green coriander and serve it with chutney or sambar.
