How to make Murmura Dosa
step 1- To make puffed rice, clean puffed rice and transfer it to a big bowl, add water and keep it soaked. Now take another bowl and add semolina in it, then add buttermilk to the semolina and mix. Cover both the bowls and leave for 15-20 minutes. By doing this the semolina (rava) will swell and the puffed rice will also get soaked well. After this, remove the puffed rice from the water and transfer them to a mixer jar.
Step 2- Now add soaked semolina, gram flour, wheat flour, salt as per taste and a little water in the jar and grind until a smooth and medium thick batter is prepared from all the ingredients. After this, pour the prepared batter in a big mixing bowl and beat it properly for at least 2 to 3 minutes. Now cover the prepared batter and keep it aside for 10-15 minutes. Check the consistency of the batter after the stipulated time. If the batter is too thick then you can mix some water.
Step 3- Now add baking soda and lemon juice to the batter and mix properly. Now take a nonstick pan and heat it on medium flame. When the pan becomes hot, sprinkle some water on it and wipe it with a cotton cloth. After this, take puffed rice batter in a bowl and pour it on the pan and spread it. After baking for some time, pour some oil on the edges of the dosa.
Step 4- After the upper surface of the dosa dries, spread finely chopped onion, capsicum, green coriander and grated cheese on it. After this sprinkle red chilli powder, black salt and chaat masala on the dosa. Once the dosa becomes crispy, fold it and take it out in a plate.
