necessary materials
-Fresh Amla – 500 grams
-Jaggery – 400 to 450 grams (adjust as per taste)
-Water – 1 cup
-Cinnamon powder – half teaspoon
-Cardamom powder – half teaspoon
-Ghee – 1 teaspoon (optional)
Method of preparation
1. Preparing Amla
First of all wash the gooseberries thoroughly. Boil water in a big vessel and add gooseberries to it and boil for 10-12 minutes, until they become soft. After boiling, cool the gooseberries and remove their seeds. After removing the seeds, cut the gooseberries into small pieces.
2. Preparing the paste
Prepare a smooth paste by putting chopped gooseberries in the mixer. If the paste seems thick then you can add a little water.
3. Making jaggery syrup
Pour 1 cup water in the pan and add jaggery in it and let it melt on medium flame. When the jaggery melts completely, filter it through a sieve so that there are no impurities in it.
4. Making Jam
Add prepared Amla paste in jaggery syrup and cook on medium flame while stirring continuously. When the mixture starts thickening, add cardamom powder, cinnamon powder and ghee into it. Ghee makes the jam shiny and spices add aroma to it.
5. Cooking and storing
Cook the jam for about 12-15 minutes. When the mixture thickens and starts shining and starts dripping from the spoon, then understand that the jam is ready. Let the jam cool completely and pour into clean, dry glass jars. It can be easily used for 2-3 months by keeping it in the refrigerator.
