Jharkhand’s kitchen has always been known for its desi taste and traditional dishes. Many types of pickles are made here in the winter season, pickles of lemon chilli and many types of vegetables, but there is one such pickle which people wait for throughout the year. That special pickle is new potato pickle.
In many districts of Jharkhand like Hazaribagh, Giridih, Koderma, women make this pickle with new potatoes with great fondness. Since ancient times, this pickle is seen in most of the houses in these areas. Its taste is so delicious that people enjoy it a lot.
While sharing the recipe, tribal woman Raveena Kachhap says that making potato pickle is very easy and it can be prepared easily at home with very less ingredients. To make this, small sized potatoes are first selected, then washed and cut into thick pieces in the shape of bhujia.

He further said that while cutting, care must be taken that immediately after cutting it is put in cold water. So that the potato does not turn black and its starch also gets removed properly. After this, when all the potatoes are cut, they are taken out of the water.
He further told that now a special process is done in this potato in which lemon juice is mixed in the potato. Due to which there is slight sourness and it is kept in the sun for one and a half to 2 hours to dry. If there is no sunlight, it can also be dried under a fan.
Raveena Kachhap further explains that spices are also prepared during this time. In this, red chilli, turmeric, fenugreek, nigella, celery, salt and mustard seeds are mixed and ground coarsely and the mustard oil is heated and left to cool.
Then these spices are mixed in potatoes. Also mustard oil is slowly added and potatoes and spices are mixed. While mixing, light vinegar and dry mango powder are also added for sourness. This pickle is kept in the sun to ripen for about 10 days.
This pickle of new potatoes prepared during the winter season lasts for weeks and enhances the taste of food. Such people like to eat bread with rice etc.
