Winter Veggies Halwa Recipe: Eating hot halwa in winter is a different pleasure. If you want to eat healthy halwa, then along with carrot halwa made in winter, halwa made from bottle gourd and pumpkin is also very tasty. If people in your house do not like to eat these vegetables, then make this halwa and feed them once, they will also eat it with great demand. This halwa is not only very tasty, but it also increases immunity by being rich in vitamin A, fiber and antioxidants. The special thing is that there is no need of mawa or heavy ingredients to make it, this halwa can be prepared in minutes with just a few basic ingredients. So this winter, try this easy winter dessert recipe, which will win the hearts of everyone from children to adults.

This soft, light and nutritious halwa without khoya is a great sweet recipe in winters.

1. Carrot Halwa without Mawa –

Ingredients
• Carrot – 4 cups coarsely grated
• Ghee – 4 tablespoons
• Milk – 1.5 cups
• Condensed milk – ½ cup
• Cardamom powder – ½ teaspoon
• Almond slivers – 1 tablespoon
• Cashews – 1 tablespoon (chopped)
• Pistachios – 1 tablespoon (sliver)

How to make (Method)-
It is very easy to make carrot halwa without mawa. First of all, wash the carrots and grate them well. Now heat a heavy bottomed wok or pan and add ghee in it. As soon as the ghee is hot, add grated carrots and fry for 7-8 minutes, until the carrots become slightly soft and fragrant.

Now add milk to it and cook on medium flame until the milk reduces to half. When the carrots melt well with the milk, then add condensed milk to it. Cook it for 10-12 minutes while stirring, so that the halwa becomes thick and shiny. Now add cardamom powder and mix well. Add almonds, cashews and pistachios on top and fry for 2 minutes. Your delicious, creamy and mawa-free carrot halwa is ready.

2.Mawa Pumpkin Halwa –

Ingredients
• Pumpkin (Yellow/Bhopala) – 3 cups grated
• Ghee – 3 tablespoons
• Milk – 1 cup
• Sugar – ½ cup (as per taste)
• Cardamom powder – ½ teaspoon
• Almonds-cashews – 1 tablespoon each (chopped)
• Pistachios – a little (for decoration)

How to make (Method)
First of all, wash, peel and grate the pumpkin. Now heat a heavy bottom pan and add ghee in it. As soon as the ghee is hot, add grated pumpkin and fry on medium flame for 6-7 minutes, until the raw smell of pumpkin goes away.

Now add milk to it and cook while stirring continuously. Cook it until the milk is completely absorbed and the pumpkin becomes soft and becomes like a mixture. When the mixture starts thickening a little, add sugar to it. As soon as sugar is added, the pudding will be a little loose, but will start thickening again in 5-6 minutes. Now add cardamom powder and chopped almonds and cashews into it. Cook while stirring for 2 minutes so that the flavor of dry fruits dissolves in the halwa. Switch off the gas and serve with pistachios on top.

3.Pumpkin Halwa –

Ingredients
• Pumpkin (Yellow Bhopala) – 3 cups grated
• Ghee – 3 tablespoons
• Milk – 1 cup
• Sugar – ½ cup (as per taste)
• Cardamom powder – ½ teaspoon
• Almonds – 1 tablespoon (chopped)
• Cashews – 1 tablespoon (chopped)
• Pistachios – a little (for decoration)

Method of making
Pumpkin halwa without khoya is equally tasty and creamy. First of all, wash, peel and grate the pumpkin. Now heat ghee in a pan. When the ghee melts, add grated pumpkin and fry on medium flame for 6-7 minutes. This roasting step enhances the taste of halwa and completely removes the rawness.

Now add milk to it and cook while stirring. Let it cook until the milk gets absorbed well into the pumpkin and the pumpkin becomes soft and becomes like a mixture. When the mixture becomes thick, add sugar to it. After adding sugar, the halwa will be a little loose, so cook while stirring continuously for 5–6 minutes, until the texture of the halwa becomes thick again.

Now add cardamom powder and chopped almonds and cashews and cook for 1-2 minutes so that the flavors get mixed well. Switch off the gas and garnish with pistachios and serve hot. This soft, light and nutritious halwa without khoya is a great sweet recipe in winters.
