Methi Chakli Recipe: Crispy fenugreek chakli is a great healthy snack in winter. Traditional chakli has been given a new twist with the flavor of fenugreek and its health benefits. It is easy to prepare and can be stored for a long time so it is an ideal snack for everything from festivals to everyday evening tea.
Material
finely chopped fresh fenugreek leaves
Rice flour 2 cups
Half cup gram flour or ground daal
sesame seeds 1 tbsp
Red chilli powder 1 tsp
a little turmeric powder
celery half teaspoon
salt as per taste
Ghee or oil for kneading the dough
oil for frying
water as required
Method of preparation
In a large bowl, add rice flour, gram flour, chopped fenugreek, sesame seeds, red chilli powder, turmeric, celery and salt and mix well. Add ghee or oil to it and prepare the moyan with hands, so that all the ingredients are mixed well. Now knead a soft and smooth dough by adding water little by little.
Place a star shaped nozzle in the chakli mold and take out chaklis from the dough. Heat oil in a pan and fry the chaklis on medium flame until they become golden and crisp. Take out the fried chaklis from the oil and place them on a kitchen tissue to remove excess oil. Serve after cooling.
important tips
Use fenugreek leaves only after drying them thoroughly, otherwise the dough may become sticky. Always fry the chaklis on medium flame so that they get cooked well from inside and remain crispy from outside. Store the cooled chaklis in an airtight container. It will remain crisp for 10-12 days.
