Ingredients for making Semolina Shortbread
Take semolina, boiled potatoes, chopped green chillies, chopped coriander, ginger paste, celery, asafoetida, turmeric, Kashmiri red chilli powder, dry mango powder, garam masala, teaspoon, fennel, crushed coriander seeds, cumin, oil as per requirement and salt as per taste.
How to make Semolina Kachori
step 1- To make semolina kachoris, add 2 spoons of oil in a pan and heat it on medium flame. Then add cumin, coriander seeds and fennel and fry for some time. After this, add chopped green chillies and ginger paste to the spices, mix and saute while stirring. After frying for a few seconds, add turmeric, red chilli powder, garam masala, dry mango powder and a pinch of asafoetida in the pan.
Step 2- When the aroma starts coming from the spices, take boiled potatoes, mash them and put them in the pan and mix them with the spices. Then add salt as per taste to the stuffing. Finally, mix green coriander leaves and turn off the gas and take out the potato stuffing in a bowl. Now pour 2 cups of water in a vessel and add celery, 1 teaspoon oil and a pinch of salt in it.
Step 3- When the water starts boiling, slow down the gas flame and slowly add semolina (rava) into the water and stir with the help of a spoon. Now cover the vessel and let the semolina boil for 3-4 minutes on low flame. After this, transfer the cooked semolina to a big bowl and let it cool. When the semolina cools down, knead it with hands to make a soft and smooth dough.
Step 4- Now take out the ball shaped dough and flatten it and press it from the edges to give it the shape of a bowl. Fill the potato stuffing in the middle and then close it from all sides. After this, press slowly and make a ball and then flatten it a little by placing it between the palms. Now heat oil in a pan, add semolina kachoris and deep fry them till they turn golden. In this way, tasty Suji Kachori is ready.
