First of all, wash the gooseberry thoroughly and keep it in a vessel with water on low flame. When the water boils, boil it for 3–4 minutes. By boiling this much, it becomes soft and slightly sweet, and its bitterness also reduces. Now keep half a cup of water in a pan and add boiled gooseberries. After this, add half a kilo of jaggery on top and keep the gas on low. When the jaggery melts completely, cover it and cook for 10 minutes. Now add ginger juice, black salt, cinnamon and cardamom to it. Keep the gas on medium and cook it for 20–25 minutes, until a stringy syrup is formed.
